Are yours snails? I think the snails have plain roofs, and the roundels have the variable patterns.

What is the purpose of the extra couplings in several different wagon packs without the hook?

They appear to be longer than the fitted couplings and include what looks like a packer. My guess is they might be included for shorter radius curves.
